Raw Rainbow Collard Rolls
Ingredients:
-Collards
-Avocado (mash for the spread)
-Grated Carrots
-Sliced Cucumber
-Sliced Red Bell Pepper & Orange Bell Pepper
Peanut Sauce: (blend)
– 3 Tbsp Bragg’s liquid aminos
-2 Tbsp red wine vinegar
-1 Tbsp olive oil
-1 garlic clove
-3 Tbsp creamy almond butter
-2 Tsp red Thai chili paste
-1Tbsp almond milk
Directions: (Prep Time: 20 min)
Lay Collards on surface, spread the avocado on the center of leaf, layer in the veggies, drizzle peanut sauce on top of the veggies. Sprinkle veggies with chopped cilantro and sesame seeds. Fold the ends of the leaf in (like a burrito), roll & serve.
